Abstract
The results of the study of 11 pistachio varieties grown in Andalusia during the 2019 and 2020 campaigns are presented, for the content of total phenolic compounds, the antioxidant activity, the content of carotenoids, the content of chlorophyll. The color of the shell, the integument and the interior of the fruit is also studied.
